With Dr Seuss’ birthday falling in March, the schools and libraries here all take the opportunity to celebrate with Dr Seuss themed events and activities. Leighton’s school had a “Wacky Day” and encouraged the students to dress in a “wacky” way, so when I randomly came across these cookies on Pinterest a few days before, I knew I had to make them as a surprise for the kids and teacher!
Originally, I was aiming for lighter colors, but because I used my homemade dough recipe (coming soon in my next blog post!), the yellow base made for deeper, more vibrant shades. I separated each color into 26 balls, and then I combined one of each of the 4 colored balls to roll and swirl together.
It took a few tries until I got into the groove of how to roll the ropes out in a way that yielded a swirl I liked, but once I got going, it didn’t take long to get all the cookies ready to bake. I skipped the sprinkles because I didn’t have any in the exact shades to match. When the cookies were all baked, they were as ‘wacky’ as I hoped!
